Tea Biscuits

2 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
2/3 cup butter or margarine
1/2 cup whipping cream
2 tablespoons orange juice
Raspberry Sauce
1 pint fresh raspberries
1/3 cup powdered sugar
1/4 cup orange juice
1 pint fresh raspberries
whipped cream
Heat oven to 400-degrees. In large bowl combine flour, 1/2 cup sugar, baking powder, and
slat. Cut in butter until crumbly. Stir in 1/2 cup whipping cream and 2 tablespoons orange
juice just until moistened. Turn dough onto lightly floured surface; knead until smooth (1
minute). Roll out dough to 1/2" thickness. With 2 " scallops round or
heart-shaped cutter, cut out 8 biscuits. Place 1" apart on cookie sheet. Bake for 10
to 14 minutes or until lightly browned. Meanwhile, in blender on high speed puree 1 to 2
minutes 1 pint raspberries, powdered sugar, and orange juice. Place biscuits in individual
dessert dishes. Serve with raspberry sauce, whipped cream, and fresh raspberries.
